I search to web for fabulous vegan desserts since they're harder to make than other meals. www.mywholefoodslife.com has some wonderful recipes.
Here's a favorite since I adore chocolate and like simple preparation even better. There is no flour and takes about 5 minutes to put together and about 15 minutes to bake.
Ingredients
- 1 1/2 cups cooked black beans or 1 can black beans (If using canned, drain and rinse very well)
- 3/4 cup unsalted almond butter (or nut butter of choice)
- 1/2 cup cocoa powder
- 2 tsp vanilla extract
- 1/2 cup maple syrup
- 1 tsp baking powder
- 1/2 tsp sea salt
Instructions
- Preheat oven to 350.
- In a food processor - easier than a blender- grind up the beans and cocoa powder.
- Then add the remaining ingredients and blend well.
- Drop cookies onto a parchment lined cookie sheet
- Bake for 14-15 minutes.
- Cool fully before removing them from the baking sheet.
For best results, store them in the fridge or freeze them. I use Pyrex lidded containers in both fridge & freezer.
