Quick & Easy New Year's Breakfast

This is easy and tasty and is a light starter to a New Year's Day brunch.

  • 1
    head romaine lettuce
  • 3/4
    cup refrigerated bottled blue cheese salad dressing
  • 1/2
    cup crumbled blue cheese (2 ounces)
  • 1/2
    cup chopped Roma tomatoes
  • 2
    thick slices peppered bacon, crisp-cooked, drained, and crumbled

Cut head of lettuce crosswise about 4 inches from the top. 
Separate leaf tips. Place 12 of the leaf tips on a serving platter to use as cups. 
Cut the remaining lettuce crosswise into shreds.

Fill lettuce cups with shredded lettuce, salad dressing, cheese, tomatoes, and bacon.
