DIY Energy Bars


 When you need a no-sugar-added energy bar in just a few minutes that can be your breakfast, an afternoon snack or even dessert, pull out bananas, oats, nuts and dates. These are easy and healthy and you can spice them in a variety of ways. 




INGREDIENTS: 

2 large ripe bananas
2 cups rolled oats
1/4 cup pitted, chopped dried dates  
1/4 cup chopped nuts (soft nuts like cashews, walnuts, and pecans work best)
Optional: 
1/8 tsp grated nutmeg
1/8 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt - to taste

DIRECTIONS: 

Preheat your oven to 350 degrees
Use parchment paper or lightly grease a 9x9 inch-square baking dish
Mash the bananas no large chunks are remaining. You should have 1 1/4 cups. 
Add vanilla and salt as desired 
Mix in oats then dates then nuts 
Press the mixture evenly into your baking dish. 
For a chocolatey treat, press in about a quarter cup of semi sweet chocolate bits.
Sprinkle on cinnamon or nutmeg for a bit of spice.
Bake for 30 minutes
Let cool and cut into bars.
