This is easy and tasty and is a light starter to a New Year's Day brunch.
- 1head romaine lettuce
- 3/4cup refrigerated bottled blue cheese salad dressing
- 1/2cup crumbled blue cheese (2 ounces)
- 1/2cup chopped Roma tomatoes
- 2thick slices peppered bacon, crisp-cooked, drained, and crumbled
Cut head of lettuce crosswise about 4 inches from the top.
Separate leaf tips. Place 12 of the leaf tips on a serving platter to use as cups.
Cut the remaining lettuce crosswise into shreds.
Fill lettuce cups with shredded lettuce, salad dressing, cheese, tomatoes, and bacon.
